Oh Chia, how I love thee. Honestly since finding out about the amazing benefits of chia seeds, I eat them all the time! Small little miracle seeds packed with tons of nutrients, you have to start using them in your diet too!
Benefits of Chia Seeds
- Excellent source of omega 3 – perfect if you’re a vegan or vegetarian. Omega 3 fatty acids are essential fatty acids that help raise your HDL cholesterol (the good cholesterol), and lower your LDL (bad one). essential fatty acids are essential because your body cannot make them. Make sure to get your daily dose.

- high in plant protein
- high in fiber
- Rich in calcium and iron
Today I am bringing you one of my favorite ways to eat Chia. In a pudding! they gel up so well when mixed with a liquid, and firm up almost mousse like. Use them whole or blend them, but always soak them. They absorb water and are great source of fiber.
TROPICAL COCONUT AND PINEAPPLE CHIA SEED PUDDING
1 cup coconut milk (unsweetened)
¼ cup chia seeds
1 pineapple ring, sliced
1 tbsp maple syrup
2 tbsp walnuts, chopped (optional)
1. Mix chia and coconut milk in a bowl.
2. Allow 5-10 minutes (or longer) for mixture to thicken into a pudding-like consistency.
3. Divide into two bowls, and add the pineapple, drizzle with maple syrup, & top with walnuts. Enjoy!
