Hey my lovelies! I am blogging today all the way from the beautiful island of Cyprus! I will be here for the next month and a half. Today I am bringing you a really simple recipe. A dish that is super high in fiber, which is important for our overall health of the digestive system. Brussels sprouts are the star of todays recipe. they are extremely rich in Vitamin C and K. They are also a good source of vitamins folate, manganese, B6, B1, copper, phosphorus and potassium, and they also have omega 3 fatty acids. They are truly packed with nutrition. A great side or main dish. 

Garlic Lemon Roasted Brussels Sprouts

Serves 4

1 lb Brussels sprouts (washed, ends removed, halved)
2-3 cloves of garlic (minced)
2 tablespoons extra virgin olive oil
2 teaspoons fresh lemon juice
dash salt and pepper

Preheat oven to 400F.

In a bowl toss sprouts with garlic, oil, and lemon juice. Spread on a baking tray and season with salt and pepper.

Bake for about 15 minutes. Toss.

Bake for another 10 minutes.

Serve and Enjoy!

Tip: They taste a lot better roasted then boiled. Sprinkle some nutritional yeast on them for a very cheesy, nutty flavor. Yum!
