I used Kale here, but you can use any other green of your choice. Also, feel free to change up the beans whenever you feel like it. I like to massage the kale, dress the beans and place them on top of the kale. 🙂
Apple and Avocado Bean Salad With Massaged Kale
Makes 2 servings
1 bunch kale, stems removed and leaves torn into bite-sized pieces
1 lemon, juiced
1 garlic clove, minced
1 tablespoon extra-virgin olive oil
1/2 can of pinto beans
1/2 can of kidney beans
1/2 chopped red apple
½ teaspoon sea salt
½ teaspoon black pepper
1 scallion, chopped
1 cucumber, peeled and chopped
bunch of parsley
Add kale to a large mixing bowl along with lemon juice, garlic, olive oil, sea salt, and black pepper.
Massage the kale with your hands until it is wilted (about 2 to 3 minutes).
Once the kale is ready, top your salad with scallion, apple, cucumber, beans, avocado and parsley. Toss and serve.
So simple, yet lean, clean and super delicious. Perfect for a light lunch, or a packed lunch on the go.
